Azul in Mexico City #CDMX is just crazy intentional about creating memories and immersive dining experiences (AND award-winning mole negro like these wicked good enchiladas…or this Canadian beef featured birria for DIY tacos…that birria was incredible btw). I’ve been taking people here for years…and their signature warm-chocolate-(because “warm” chocolate is the true way to appreciate the taste of cacao without changing its flavor by making it too hot)-made-at-your-table experience is always something people remember. It’s a show. It’s connection. And THIS time, @elreedo610 even got in on the action. “Perfect. Perfect,” our server encouraged him. Love that our server became a brand experience architect in that moment. Tribute to @azulrestaurantes internal culture that empowers their team to bring their culinary mission to life.
Even their appetizers have a #wowfactor to it. Total inspiration. A good reminder: What am I doing to ensure that everyone at every level of my business is consistently delivering an extraordinary experience and brining our mission to life? I could be doing more…like continually training, reinforcing our company values, appreciating and encouraging our team more, celebrating our team successes more frequently.

Fundamentals. Handmade tortillas. I always have ask. It’s a telltale sign of whether they are serious about crafting a true taco experience or not. Just like a sandwich shop should make it’s own bread or a pizza joint should make it’s own dough and sauce. Do they have to be as fancy as these beautiful tri-color (red, blue and yellow corn) tortillas? No way (although they ARE really good). Super cool part of the brand experience “show”…Love how they showcase and celebrate how the tortilla is the foundation of Mexican cuisine—this beautiful woman is front and center at the restaurant, hand pressing, cooking on the ceramic comal, interacting with diners. Next-level fundamentals by award-winning @ChefRicardoMunoz. He’s just a master at crafting an experience you’ll never forget …his mole negro is close-your-eyes-and-dream-of-Oaxaca good…the hot chocolate made at your table is brilliant…his business card invite for feedback. Food is an experience. @azulrestaurantes nails it.

Here we have…the magic, the secret sauce, the toque especial: the experience. Check out just some of the details of this #DIYtaco classic Mexican breakfast. Personalized, meaningfully architected, purposefully unique and memorable. Again, hat tip to @azulrestaurantes! You’ll totally be enamored by the ambience (think 500 year old, tree-lined, candle-lit Spanish courtyard) and wow-ed with everything from the Aztec-style, hot chocolate making at your table through to the intricately-carved box for your bill. ¡Provecho indeed! I know, I know…it’s #tacotuesday. But this deliberate chocolate detour was too good not to share. We were on a break-neck speed #tacotour on our 6-hour Mexico City layover and needed to take care of some #chocolateneeds. ¡Provecho!

Azul Histórcio’s terrific restaurant took what was otherwise a normal hot chocolate order and turned it into a show. Unforgettable. Mauricio rolled up the rustic chocolate-mobile next to our table and let @rustincraigmorris choose from an endless supply of intriguing flavors (#anis, chile, pennyroyal, vanilla, #ginger, and of course #cinnamon). Using his wooden #molinillo to mix the chocolate powder, he explains that traditionally chocolate was mixed with water (not milk, like we ordered…we went rogue) that wasn’t too hot or too cold so you can appreciate the “characteristics of the chocolate” (if served too hot the chocolate turns bitter). All served in replica of a Mayan ceremonial mug. Chocolate of the Gods! [Not pictured here but a demonstration of their constant commitment to the customer: two exceptions they allowed us 1) seating 5 minutes before mid-day close 2) bringing in pan dulce bread from next-store’s bakery because they were out. @grupohabita]
