When the search takes you #beyondthetaco to classic Mexican comfort food. (I know it’s kind of sacrelig to not post tacos on taco Tuesday but …) A bite of this pozole a few days ago instantly transported me to my first days living in Mexico years ago as a @ldschurch missionary in Tamaulipas. They always made pozole on special days when you’re celebrating a birthday, a wedding, a bienvenida or despedida. The taste of the hominy, rich red broth, chicken, limes, oregano…and the bite-by-bite crunch of the tostada is like Mexico giving your mouth a hug. Sara, the director of the Escuela Xochiquetzal in CDMX, made this for us. In addition to being a phenom in the kitchen, she had the vision 18 years ago to turn this old garbage dump on the corner of a rough neighborhood into this school to provide a future for generations of children. We were privileged to be there with @wejourney and @glasswingi to help physically transform her school. It was a labor of love and a fitting tribute to everything Sara does. Everything’s better “hecho con amor!” … which just happens to be the secret ingredient of this pozole.

Spent the weekend in CDMX with this sweetheart, Natalia, and her classmates at her Escuela Xochiquetzal. Totally honored to be with them. The kids (as usual) were some of the hardest workers helping us revitalize their school with bright paint, murals in the small library, baby room and mess hall, garden and playground equipment. We also ate like royalty (as evidenced by these killer taquitos, tostadas smeared with refried black beans, topped with homemade tinga and a red salsa that had us on 
), laughed a lot, crushed a piñata (of course) and danced to #Despacito at least 12 times. What a blast we had together. Nothing like service to build new lifelong friends with these kids.
