Taconazo

How long have you ever gone without #tacos? Even though the #tacosacrifice was real, our 10-day #tacofast was totaly worth it. We were on a phenomenal humanitarian service expedition in rural Ecuador working with the amazing Quichua people on their fish hatchery and school projects as well as conducting business and health training with @singularhumanitarian and @choiceorg. Even though Marcelo and team crafted some really delicious food while we were there, we straight up needed to significantly turn up the spice their #ají and longed to wrap any well-seasoned meat in tortillas. So we beelined it for the nearest Mexican restaurant in Quito. This campechana taquiza at #Taconazo hit the spot with its carne “mechada,” pollo, chorizo, “Chancho de pastor,” and picadillo covered in queso. It was just enough to satisfy the #taconeed (plus our server, Diana, was so kind and helpful—in true Ecuadorian fashion). The search continues at the middle of the world…
