I crave the _exact_ flavor of these deep fried quesadillas and their signature red and green salsas. Salty, garlicky, spicy. Por favor! In the 20+ years I’ve bringing friends to this puesto inside the Mercado at Coyoacán, I’ve never the owner. And then it happened. On a recent (and epic) bschool taco tour reunion to CDMX, we met Hector and got to finally thank him for the decades of street food so good it’s a destination. You guys…they’ve had the same benches, same vat of oil, same old school soda fridge, same tip jar (at least it seems so)…same recipes and same feeling like you won the food lottery. Quesadillas Las Mejores indeed. #muchogusto #coyoacan

How does Bertha win us over? The “pilón” — that little bit extra, on-the-house treatment to wow us and keep us coming back. Precisely because of that type of treatment AND the amazingly fresh, crispy corn tortillas in this obscure, gritty food court behind the #Coyoacan cathedral (and within earshot of the local pancake artist), I’ve made this a must-stop on the CDMX taco tour for YEARS. Unreal good. Faves: beans and cheese, tinga, and carne. These three pilón quesadillas were filled with chicharrón (pig skin) and nopales (no cheese…because that’s how they roll). Had to overcome my chicharrón con pelo PTSD.

Meet Berta. We asked her how many of these ridiculously good and fresh street #quesadillas she’s #handmade in her lifetime. She just laughed, “Uf! ¿¡Quién sabe?!” Obligatory stop in #Coyoacan #DF, this open air #foodcourt has all the #deepfried #antojitos, #pozole and #pancakeart you want! These #carne, #pollo and #frijoles con queso though…she cranks these bad boys out so fast (while being so friendly). So perfectly crispy, fresh and flavorful. When I think about #MexicoCity #streetfood in my mouth, THIS is what I dream about.
