Taco Tuesday tribute to my taco-obsessed compadres @tracyellenkimball and @jeffdkimball. You know how you meet those forever friends that share a passion with you?! That’s what happened with the Kimballs…@tracigarfflongmore intro’d us nearly three years ago over tacos in Mexico City when they had just started their missionary work for the @churchofjesuschrist presiding over the Pachuca area near CDMX.

This post shows our last tacos together before they returned home. It’s the tale of two tacos that begins with the high-end experiment to try out this uber-cool restaurant called @Tetetlan in famous architect Luis Barragán’s estate and re-purposed horse stables. Attention to detail (everyone is gifted a “colorín de la buena suerte” — a red good luck bean…Luis used to carry 2 in his pocket everywhere he went), experience design (even the bill was delivered in a handcrafted/painted wooden toy truck) and ambience was off the charts (original stable walls and stone floors covered in glass). And then there was the food that tasted so farm-to-table you’d think they harvested the corn minutes before they served it as handcrafted tortillas. So fresh, flavorful and hearty, we thought we were in a rancho with everything cooked on leña and clay pots. Unreal. Incredible. Special. Tlayuda was so rich, earthy with mole, nopales, cecina, puréed beans. And that roasted cauliflower…ni hablar. Blue corn. Tetelas. Even crickets (nbd for Tracy). Had us speechless (crazy if you know us) throughout the entire meal.
